I made apple sauce yesterday. I had thought that las year a bushel of apples made twenty-ish quarts, but I must have misremembered either the amount of apples or the resulting jar count. This year I got 16 quarts from my bushel of apples. I have never been terribly organized about choosing apples, usually just going with whatever is available in B grade at the time. This year I ended up with Cortland and honey crisp. The apple sauce came out a little sweeter than I prefer. It is still tasty. But, since I need more quarts to make it through the year anyway, I think I’ll wait until some other apples are in season and try another half bushel.
