
I made the large batch of apple sauce for the year. The apple crop this year was poor, so I didn’t have a large selection of apples. The local farm stand had the usual B grade Cortlands and Macintosh’s. I decided to try adding some different apples in, looking for a more nuanced flavor.
- 1/2 bushel B grade Cortland
- 1 peck Northern Spy
- 1 peck Arkansas Black
Isaac was kind enough to nap for most of the process. I did like the flavor better than some years when I have used even more Cortlands, but you could still taste it is a Cortland based applesauce. I produced 15 quarts of apple sauce which Isaac started chowing through almost immediately. For the first time in a long while, I actually messed up canning a few and they leaked. But I just stuck them in the fridge in the expectation they will be gone soon.
